- 1725, from French caramel "burnt sugar" (17c.), via Old Spanish caramel (modern caramelo), ultimately from Medieval Latin cannamellis, traditionally from Latin canna (see cane (n.)) + mellis, genitive of mel "honey" (see Melissa).
